Today I brought you biryani, one of the favourite dishes of Bengalis. There are no biryani pairs on holidays, festive occasions or guest hospitality. One of the most fun biryani of different types of biryani is Kashmiri biryani. You can easily make this biryani which is everyone's favourite at home. Let's find out, kashmiri chicken biryani's easy recipe.

Kashmiri Chicken Biryani Cooking Ingredients..

Whatever it takes to marinate meat

  • Sour yogurt – 2 cups
  • Ginger paste – 2 tbsp
  • Garlic paste – 2 tbsp
  • Turmeric powder – 1/2 tbsp
  • Chilli powder – 1 tbsp
  • Onion Gourd – 1 cup
  • Lemon juice – 1 tbsp
  • Salt – 1 tbsp
  • Lemon juice - 2 tbsp

Biryani Making Materials

  • Chicken - 1 kg
  • Basmati Rice - 500 g
  • Cinnamon - 2
  • Cardamom - 3/4
  • Bay Leaf - 3
  • Cumin seeds - 1 tbsp
  • Coriander powder - 2 tbsp
  • Ghee or oil – 1 cup
  • Hot spices - 1 tbsp
  • Keora/ Rose Water - 2 tbsp
  • Cashew paste - 1/2 cup
  • Saffron - 1/2 tbsp
  • Raisins - quantity
  • Salt - 1/2 tbsp


Cooking Methods

1. Not all ingredients are well mixed to marinate meat and marinatinine in a bowl. Now mix the meat well with spices and keep them in the fridge for 30 minutes. It would be better if meat could be marinated in the fridge overnight the previous day.

2. Then wash the rice thoroughly and drain the water for 20 minutes.

3. Then boil water in a pan and add the rice. Then boil with lemon juice and salt to taste for 6/7 minutes. Make sure that it is not completely perfect. When 2/3 rd is boiled, drain the rice and leave it in a cold place.

4. Then heat ghee/oil in a pan. When the oil is lukewarm, stir in it for a while with raisins. Keep raisins in when they swell. Similarly, roast almonds lightly.

5. Now stir in the oil in the pan with cardamom and cinnamon for a while. Then cumin in it.

6. Take out the marinated meat in the fridge and put it in the stove pan. Then add heat for 10-12 minutes and cook.

7. Then grate the meat thoroughly with coriander powder, hot spices and almond paste and cover with 2 cups of hot water. Cook on medium heat for 1 hour. Notice if the meat has melted. If not boiled, add a little hot water to it.

8. When the meat is completely boiled, layer the pre-boiled rice on the meat and spread it. Now spread keora water, raisins and roasted almonds on top.

9. Now cover well with a lid and cook on a light medium heat for 10-15 minutes.
